What is your signature dish?

I make a pretty decent spaghetti sauce, I love making soups from scratch but I think the dish I'm most consistent with would be a smoked Brisket. All skill is gained from experience and I'm closing in on my thousandth brisket this summer, I better be good at it.

Who is your culinary inspiration?

I grew up on Emeril and Pepin but I think it wasn't until I watched shows with Jamie Oliver and Bobby Flay that I realized you can be a great home cook without a culinary degree.

What would you do with the $25,000?

A food truck, no doubt about it. A restaurant is fine but the mobility and freedom of a kitchen on wheels would be a dream come true.
