What is your signature dish?

Dry aged blue mold fungus Magret Duck in blue mold fungus roqueforti, served with jam of baby walnuts and homemade focchia.

Who is your culinary inspiration?

As great master in the his kitchen i will choose a Chef Yannick Alleno. Hi get all in the world and brings a new vision how to do the magic in the original flavors of each product that he touched. New technology in very low temperatures cooking method to the extremely high in him meals , bombings mouse fills that you will ever try it before. But I cannot forgot to mention that my big respectations to Julia Child, Massimo Bottura, Yotam Ottolenghi, Allan Duncan, Adrian Ferra.

What would you do with the $25,000?

I will love to start a first steps to own my small restaurant with 20 seet, and make the micsologi of old world cuisine flavors combination with my vision and knowledge in the meals. I know that it will be a great help to me to reach the first step of it. I know I will be a next pioner for new culinary vision.
