A delicious hand food-- made from a curved cup of fried plantain containing shredded fried pork, small mango spears for sweetness and moistness, and topped with my custom colorful pickled peppers. It's attractive to the eye, filling without being too heavy, and elevates the pork with a salty-sweet bite. It makes a marvelous appetizer.
Who is your culinary inspiration?My mother is my culinary hero. A mother of 13 of us, she needed to make a meal stretch every day. She was always making her own creations with ingredients from the garden. I learned every single thing from her efficient, backyard garden cooking style.
What would you do with the $25,000?I would pay my bills! I know that with that kind of prize I could not just get my life back under control, but also really improve my food truck experience. That way I could offer all sorts of new culinary creations.
