What is your signature dish?

My signature dish reimagines classic Jamaican rice and peas as a creamy risotto, blending my Caribbean roots and flavour with modern technique and flavour.

Who is your culinary inspiration?

My culinary inspiration comes from my grandmother, who taught me that food is about love, family, and bringing people together. Her cooking showed me the value of patience, care, and flavour rooted in culture. I’m also inspired by Charlie Mitchell, whose creativity, discipline, and modern approach to cuisine motivate me to continue growing as a chef while staying true to my Caribbean roots and the stories behind every dish

What would you do with the $25,000?

My goal is to open my own restaurant and create a dining experience that reflects my culture, creativity, and passion for food. I want to blend modern techniques with Caribbean flavours to create dishes that feel both familiar and exciting, while building a space where people feel welcomed, connected, and inspired through food.
