Receive Text UpdatesI have so many, we change our menu weekly based on what our local farmers are growing and what our small producers make in Asheville and around Western North Carolina. My local mushroom pot pie is a best-seller... we buy Black Trumpet Farm mushroom varieties, roast them, make my own mushroom stock using the stems, and then a flavorful filling encased in a made-from-scratch pie crust. Other signature dishes I'm known for are: chicken enchiladas, mushroom & lentil soup.
Who is your culinary inspiration?Dave Arnold from Booker and Dax Bar, Existing Conditions Bar, and the podcast Cooking Issues. I also look up to Harold McGee, author of On Food and Cooking. Last, but not least, Miss Ruby... the grandmother that everyone wanted and no one had. She was the culinary heartbeat of my parent's restaurant. She made all the chocolate meringue pies, biscuits, and southern Sunday specials like chicken & dumplings.
