What is your signature dish?

With all due respect, I have never understood this question. I have never ,ever thought about a dish that defined me as a cook or chef. Heck.. l probably won’t make a dish the same way twice due to the availability to fresh ingredients.

Who is your culinary inspiration?

Who? As in one individual? That would be Robert Brunton. Ex. Chef and Food and Beverage Director of the Pier House Resort and Spa , Key West Florida. Circa 1981.

What would you do with the $25,000?
