My signature dish is Chile Verde Mac and Cheese. The cheese is cold smoked and everything is from scratch. Topped with toasted Panko and Cotija cheese.
Who is your culinary inspiration?It is very difficult to narrow it down to one. Emeril made a big impression on me when I was getting started, Thomas Keller has been very influential as well, but outside of The big boys, I’d have to say my (late) father who pushes me to create at a very early age.
What would you do with the $25,000?I am currently unemployed. I am starting a private chef component in my catering business, but it is t coming close to being enough to take care of my family. I’m burning through my savings trying to kickstart this thing and $25K would be a life saver!
