What is your signature dish?

Apricot pork tenderloin! A sweet, savoury dish made with chicken stock, spring onions and Apricot jam, served with herb roasted baby potatoes and roasted vegetables

Who is your culinary inspiration?

My inspiration wasn’t a celebrity chef. Cooking started as survival for my family, and somewhere along the way it became my passion. When people ask me if I'm a good chef, I tell them to try my food? If they like it, then yes, I just love seeing the look on my residents faces when they try it

What would you do with the $25,000?

Set up a British cafe for my wife serving things like 'Afternoon tea' along with traditional British Baked Goods like sausage rolls, Scones, Victoria Sponge
