Receive Text UpdatesChicken Marbella. The recipe I use is from Yotam Ottolenghi 's Simple I believe..it's become the requested chicken dish for our past few Thanksgivings.
Who is your culinary inspiration?I enjoy a number of chefs but honestly I'm most inspired by the cuisines and cultures of my home country Trinidad , these include Chinese, Indian, middle Eastern African, French creole and Spanish. I enjoy tracing the routes and seeing how landing in Trinidad changed the various foods when ingredients weren't available and substitutions had to be made. On the other hand I can throw down some Yotam Ottolenghi, Grace Young for Chinese and Ms. Carla for southern! I'm a global foodie I guess.
What would you do with the $25,000?Honestly pay of a small debt and dedicate my self to keeping my Trinidad food culture vibrant in a foreign land. I'd like to write a cookbook of Trinidad food and as I said earlier with a bit of history from older generations and new! Give food demonstrations start with pop ups.
