Receive Text UpdatesMy go to is Sole Meunière served with a warm lentil and seasonal vegetable salad. I also have a Creole version made with catfish and a Creole butter sauce that is served over a low country risotto. I also make a killer biscuits and gravy, and chicken and dumplin’s.
Who is your culinary inspiration?As a young boy growing up in East Tennessee, my first inspirations were the ladies in my family. I can remember sitting on a high bar stool in the corner watching as they made Sunday lunches and holiday meals at my great aunt Willy’s house. Once I discovered food was my calling, I found inspiration in Julia Child, Justin Wilson, and many more. Food is always evolving and inspiration can be found just about anywhere.
What would you do with the $25,000?I would use the prize money to self publish my first cookbook, and kick start my Southern based catering and meal prep business. This business would in turn offer cooking classes and opportunities to other culinarians to further their education in areas where there’s not a college or school of culinary arts.
