Who is your culinary inspiration?That's a dangerous question. I find inspiration from everyone I have ever had the pleasure of cooking under. I want to work for Keller. His OCD suits me. The fact that there is no perfection kills me. What we can come close to it is very modest. It's simply about improving yourself everyday in everything that you do. Cooking is a life lesson. Not a skill. Not an art. It's a discipline. How much better do you want to get every single day? And you grow from there. This is a loaded question.
What would you do with the $25,000?I want to open a soup kitchen in my county. Restaurants are going to suffer because people can not afford to eat. I want to feed people before profit. We are going to see a huge downturn in covers due to this current administration and I want to feed people before profit. The restaurant ideal as we know it is going to die. Who is going to feed people? Nourish the hungry, not push away the starving? All I ever wanted to do as a chef is feed people. 25K will go a long fucking way.
