Who is your culinary inspiration?Chef James Kliendschmidt. He was the first person to really believe in me, challenge me and let me take the reigns on some very important parties and events. He was extremely knowledgeable and was always reading something "new to him" in the field. I take a lot of my inspiration and willingness to take chances from the lessons and techniques he taught me.
What would you do with the $25,000?I would use the prize money to open my dream restaurant! Lunch and dinner service. An entrée menu as well as smaller portions offered as tapas. Meals inspired by "down home" cooking methods and flavors with elevated nuances and plating. I've had the idea, menus, location and layout in my head for years!
