Receive Text UpdatesSince moving to South Carolina, my dish has change to accommodate the culinary scene, and the style of restaurant. My current signature dish is a stuffed prawn head, served with a creole sauce, and fried grit cakes.
Who is your culinary inspiration?My culinary inspiration(s) have varied through the years, and aren't main stream chefs, even though chefs like Anthony Bourdain hold a special place in my heart for his views on the culinary scene and culture. But my true inspirations are my family and the chefs that have given me the tools and different styles of cooking. My wife Megan, and our children, the late Chef Patrick Garcia, my father the late Donald Weber, Chef Tom Bottoms, Chef Ken Hnilo, and Chef Danté Serra.
What would you do with the $25,000?I would place some in my daughters college fund(s), and the rest I would travel with my family to different culinary destinations to expand our palate.
