Receive Text UpdatesI enjoy cooking seafood. I would say salmon with tomato and basil would be my signature dish. Gently sautéd salmon over fresh cherry tomato and butter sauce with ripped basil. A splash of orange juice/extra virgin olive oil to finish. This simple dish is inspired by Saumon à l’oseille from chef’s Jean Troisgros and Pierre Troisgros. Marco Pierre white also dish a similar dish but he poached his salmon in goose fat. I like to sauté the salmon for a nice crunch.
Who is your culinary inspiration?Marco Pierre white is my favorite chef. He is an inspiration because of how he was so young and gifted but also self aware enough to know that his 3 Michelin stars did not define him. Also, I love the way he cooks. Simple is always best and his plating is gentle and elegant. I am also inspired by chef Fredrik Berselius, Rene Redzepi, Josh Niland, Keith Floyd and Anthony Bourdain to name a few.
What would you do with the $25,000?I would use the $25,000 to invest in my podcast. Right now, I record everything on my iPhone. I would probably buy a camera, better microphones, and be able to travel to record with chefs who as of right now I cannot afford to travel to see. My podcast is called Owen by the oven and I started it last year. My dream is to travel the world and meet people who are passionate about food and hospitality and share their stories with the world.
