What is your signature dish?

Pozole or chawanmushi??? Corn custard, "Pozole" consomme, pink corn, mushroom garum Norwegian langoustine, seabuckthorn habanero "tepache" vinegar glaze, hoja santa, cempasuchil, blue and red corn

Who is your culinary inspiration?

My inspiration comes from many places. It can come from different cultures, ingredients, the seasons, the people I meet during my journeys, the chefs that have mentor me through the years, my friends and family

What would you do with the $25,000?

Winning the $25,000 would help me take a real step toward opening my own restaurant one day, a place where I can fully express my creativity through food and create unforgettable dining experiences. I want to build something that blends technique, emotion, and storytelling, where every dish leaves a lasting impression and every guest feels part of something special.
