What is your signature dish?

As of today, it would be my Lump Crab Stuffed Chile Relleno, this dish I beat Chef Bobby Flay with on his show Beat Bobby Flay on the Food Network! A roasted poblano pepper, stuffed with Oaxaca and Monterey Jack cheeses, roasted corn, lump crab and spices coated in a traditional egg batter and shallow fried. This dish is luxurious and bold and has taken over as one of the best recipes I’ve ever made.

Who is your culinary inspiration?

Chef Martin Yan! He has been an inspiration of mine since a child. I have fond memories of watching his show Yan Can Cook on PBS after school. He was a Chinese immigrant that went from nothing, to becoming a well known recognized daytime television host superstar! He entertained his audience with technical skill, energy, jokes and laughter! I loved it!

What would you do with the $25,000?

I would donate a small portion to a local Utah charity and then use the rest for helping my wife and I invest in the purchase of our first home. Something we have dreamed of doing!
