What is your signature dish?

Too many to pick but but probably my Pistachio Orange Olive Oil Cake with Pistachio Gelato

Who is your culinary inspiration?

My culinary inspiration would be both my grandmother (who was a chef) and my mother. Before I could even see over the counter, I was cooking Italian family recipes with both of them. I find myself thinking of them daily, as I re-create some of the recipes they taught me so many years ago.

What would you do with the $25,000?

I would invest it into a restaurant with my boss, Raffaele Ruggieri, the owner of the world renowned restaurant group, The Bice Group. Raffaele’s grandmother started Bice (Bee-Chey) in Milan, Italy in 1926. He is not only my boss but has become a great friend and mentor to me.
