I have so many regional dishes that I love to cook from classic beef bourginon to pulled pork tamale casserole and lasagna bechemel bolognese. There’s no end to a signature Dish when you’re a professional chef as well as a home chef
Who is your culinary inspiration?I consider myself old school. The first two books I ever read was Escoffier and kitchen confidential. I have all Kinds of inspirational chefs from Charlie Trotter, Julia Childs, Thomas Keller, Marco Pierre and Giada De Laurentis
What would you do with the $25,000?I would definitely start up my own food truck. I’ve always wanted to have a food truck, especially after watching the movie Chef.
