What is your signature dish?

My signature dish is a refined Lu Pulu — slow-braised beef wrapped in taro leaves with velvety coconut cream, elevated through French technique and modern presentation. Every plate blends bold island flavor, culture, and fine dining artistry while honoring the roots of Polynesian cuisine in a modern way.

Who is your culinary inspiration?

My inspiration comes from family traditions, island culture, and chefs who honor their roots while pushing culinary boundaries. I’m driven by the idea that food should create emotion, connection, and an unforgettable experience that brings people together.

What would you do with the $25,000?

I’d use the $25,000 to elevate Polynesian cuisine on a larger stage — building my brand, hosting unforgettable dining experiences, and creating opportunities to share island culture through food, storytelling, and community.
