This dish starts with grilled pork and beef shoulder that gets braised in an aromatic seasoned stock of Benton’s ham bones, lemon grass, lime leaves, warm spices, sugar & fish sauce. The sauce is a red curry tomato ginger coconut that is cooked low and slow with cashews, and blended smooth. It packs a subtle kick from red chilis and long pepper corn. Add over chewy egg noodles with scallion, cilantro.
Who is your culinary inspiration?Tough one, too many. Tony Maws taught me the most about everything culinary and what it actually means to care and to be a “good cook”. I cannot thank this man enough for what he’s taught me and the force that he is in this industry. He inspired me to be excellent and better in every aspect of cooking and leadership. He called his career “Kaizen”, the Japanese philosophy of continuous improvement. His teaching and mentorship is what I’m forever grateful for
What would you do with the $25,000?Well, hands down go on the European vacation that my employees and I are always talking and dreaming about. I would spend every single dime of it on them. They absolutely deserve it, they are what makes my business thrive and succeed. It would make for some great memories to have and look back at some day. I would be so happy to do that for them.
