Red mountain Trout looks better than wild caught salmon I cook it similarly salt pepper basil (may use tarragon instead) pasta shallot diced fine heirloom tomatoes garlic and Meier lemon half squeezed into the sauce and the other squeezed over the top of the trout and a touch over the pasta
Who is your culinary inspiration?I have several dating back to PBS Alton Brown The Cajun Cook and Wok with Yan ….?Emeril Morimoto barefoot contessa Ina Gordon Ramsey …. Amongst others… and while I do not follow any of them I learn from everyone… like not under estimating any chef that has performed well in a restaurant of high praise for any length of time…. Such even Carla Hall the very first time I saw a competition she won …. Skills so I draw from everyone
