I would have to say my signature dish is my version of chilaquiles. I make my salsa from scratch I use Carnitas, Queso Oaxaca and top it with graded smoked gouda cilantro and a fried egg.
Who is your culinary inspiration?I have several, including my mom my aunt my grandma as well as Anthony Bourdain and Michael Symon
What would you do with the $25,000?I would put it towards my dream of opening a gastropub after I retire from the operating engineers
