I’ve served this similarly as a basic sandwich, but have fallen in love with the concept of it being served as more of a starter or even a two bite finger food.
Who is your culinary inspiration?When I was young (maybe around 8-10 years old) we didn’t have cable tv so viewing options were fairly limited; but one day after the children’s shows were done on PBS, this quirky older gentleman with bright red suspenders and a Cajun accent came on the screen. He was cracking jokes and preparing meals that I had never seen before. The first time he said in that thick Cajun accent “a liddle bid I’ wiiine fo’ de pan, and a liddle bid o’ dat wine do’ me!&r
What would you do with the $25,000?I have been in the industry since I was 13 years old (36+years now) and am working towards launching my own catering/private chef company. This prize money would help me with getting my business licensed and insured, as well as securing a lice’s licensed and inspected kitchen to base my company out of.
