I really enjoy cooking someone's favorite dish. To me that is my signature dish. I listen to their story and what inspires them within the dish and try to recreate it. Some of my favorite dishes are foods from hunting, fishing, and foraging. For example Juniper and maple smoked trout on butter poached ramps and morel risotto with lemon gastrique
Who is your culinary inspiration?Anthony Bourdain has always been an inspiration to me. The way he molded his own philosophies with culture and then turned it into his own style of cuisine was fascinating. His humility and style to make the best of all situations and enjoy company with those around him is inspiring. He bonded with many strangers with universal language of food.
What would you do with the $25,000?I'd like to put $15000 towards catering equipment and wares for our expanding our catering division. I would use the other $10000 to take my wife and kids on vacation. I work many hours and we don't get to spend a lot of time together. A trip to a new region with food we haven't experienced would be great.
