From a scientific standpoint, the yogurt’s lactic acid and calcium gently denature surface proteins, allowing flavor compounds to penetrate while tenderizing the meat without making it mushy. The salt enhances protein solubility, improving moisture retention during cooking.
Who is your culinary inspiration?My dad is the reason I cook the way I do. Growing up, he turned weekends into blind taste tests—lining up spices, herbs, and sauces and challenging me to taste, guess, and describe what I felt. He didn’t care if I was right; he cared that I learned how to understand flavor. He taught me to trust my palate, not just follow recipes. Because of him, I cook with intention, always tasting, adjusting, and chasing balance. He taught me how to truly experience food.
What would you do with the $25,000?I’d create a hands-on cooking workshop centered around sensory learning—just like my dad taught me. Instead of focusing on recipes, participants would do blind taste tests, explore spices, and learn how to balance flavors through experience. The goal would be to build confidence in the kitchen by teaching people to trust their palate, understand ingredients, and cook with intuition rather than strict instructions.
