Receive Text UpdatesIf had the pick a signature dish I would probably have to go with my shrimp grits. I spent alot of time during my summers as child down in North Carolina were I picked up this recipe watching my uncle cook. It is the perfect low country comfort meal. All the flavors just balance out perfectly, The creamy-ness of cheesy grits just perfectly compliments the spiciness of blackened shrimp and sauce.
Who is your culinary inspiration?I have many inspirations as a chef but I would have to say it started with my family.Growing up i feel like life kind of centered around the kitchen, thats where I developed my love to cook. I've had many great mentors over the years working in restaurants since then; especially a Japanese chef named George that put up with me at my first job. I also married into a Jamaican family so that has added some new dishes to my repertoire. But as far as famous chefs Anthony Bourdain is my favorite.
What would you do with the $25,000?It would help my family out tremendously. I was looking into starting a restaurant previously but my wife and I were surprised with twins so starting a restaurant seemed impossible. I've worked in culinary for over ten years so I'm definitely ready to work for myself instead of making someone else money.
