What is your signature dish?

Authentic Taiwanese stir fried bifun thin rice noodles. Rice noodle stir fried with shitake mushrooms, woodear mushrooms, protein of your choice, cabbage, carrots, onion, garlic, ginger. Season it with soy sauce, salt, white pepper, brown sugar. Topped with fried crispy rice noodle and fried shallots, green onion, and sesame oil. Toss and serve. Enjoy!

Who is your culinary inspiration?

My mom. She inspired me to be resourceful, and the willingness to always challenge myself with my dishes and push my limit. She was her ultimate competitor and I'm the same! My mom could make ingredients such as intestines, pig brain, fish heart, fish roe, and shark skin stand out and taste delicious!

What would you do with the $25,000?

I would open a food truck to serve food made from the heart, with the most natural ingredients possible, and affordable for folks to enjoy and come back for seconds! ;)
