My signature dish is pan-seared wahoo with wild mushroom risotto, three-pepper coulis, cilantro oil, and a paprika oil drizzles of balsamic. It's topped with microgreens and fried plantains.
Who is your culinary inspiration?I have to say my very first one will be Bourdain. The history of the things he's done is incredible. The stories he tells are an inspiration to anybody. My second is Gordon because of the passion that he truly has for life, family, and food.
What would you do with the $25,000?I would take the $25,000, winning, and build a home-based spice company. That would provide chef-quality spices, sauces, flavor blends, and breading mixes to home chefs. By investing the winnings into labels, branding, containers, and advertisement, I would love the opportunity to pursue my dreams outside of commercial kitchens.
