I enjoy cooking dishes from all over the world. However, I think that I am best known for my gumbos and grilled/smoked meats. I grew up in Louisiana, and I love the warmth and comfort of a big bowl of gumbo and rice that's full of love. I make different kinds (i.e., green, seafood, sausage, etc.). The magic is in the roux. When it's too hot to cook inside, I step outside to throw some meat and veg on the grill. I use charcoal and real wood chips. My Cajun smoked turkey is a real crowd pleaser.

I grew up watching "Two Hot Tamales" (with Susan Feniger and Mary Sue Milliken) and Justin Wilson on public television. My mother and grandmother Adele taught me the kitchen essentials, but these cooking shows broadened my outlook on what was possible. I have expanded my culinary knowledge as food channels have become globally inclusive. I am also learning to cook with more foods that are beneficial to my immune system after being diagnosed with Crohn's Disease and Lupus.

I would like to buy a food truck. I enjoy being a chemist, but I'd love to chef it up on the weekends in the Charlotte area. I want to be able to bring the real tastes of Louisiana to NC. I love sharing my food and meeting new people. I would set the remainder aside for my son to go to college or trade school. He's my biggest fan and my most meticulous critic. We are excited for the opportunity to run a food truck together.
