Topped with golden air-fried lions mane mushrooms, ancho chili crema, mole coloradito, vibrant fermented surprise elements, alive with acidity, crunch, and nourishment. Finished with fresh herbs and a touch of heat, each element is a balance of tradition and vitality, awakening the palate with something modern and vibrant.
Who is your culinary inspiration?I am inspired by elders who have passed down generational food wisdom, farmers who care for the land, and my youngest chefs whose creativity keeps cooking joyful and alive. My path has been shaped in kitchens around the world, from Japan to Latin America, where I learned fermentation traditions like miso and koji and the belief that food is medicine when made with intention. Julia Child remains a guiding influence for her joy and accessibility in the kitchen.
What would you do with the $25,000?I would be deeply grateful to receive this $25,000 to expand my culinary mission by developing an educational platform of cooking videos, online nutrition courses, and a foundational cookbook. Focusing on topics like gut health, hormonal health, fermentation, and our relationship to food, my goal is to help individuals and families not only learn how to prepare nourishing meals, but also reconnect with food in a deeper, more meaningful way.
