Pounded Chicken with Hand-Rolled Pasta & House Marinara This is the dish I come back to again and again. Chicken pounded thin, pasta rolled by hand, and a marinara I’ve been perfecting for years. Nothing fancy, just really good food made the right way.
Who is your culinary inspiration?Gaby Dalkin taught me that cooking doesn’t have to be intimidating to be impressive. Her recipes are fresh, fun, and actually doable, and that energy completely changed how I cook for people. She reminded me that the best food comes from a place of joy, not stress, and I carry that into every kitchen I work in.
What would you do with the $25,000?I would put it straight back into my private chef business. New equipment, more resources, room to keep growing something I built myself. And then I would take my four kids on a trip, because at the end of the day, all of this is for them.
