Receive Text UpdatesIt is difficult for me to say what my signature dish is. Being a private chef is usually geared more towards what the client asks for and their preferences. If I were to have a favorite dish to cook for guests it would be duck and donut. It is seared duck breast, a savory fresh donut with a maple glaze, crispy duck skin crumbles, over farm fresh salad greens and tossed in a light maple, sherry vinaigrette and topped with crumbled goats cheese.
Who is your culinary inspiration?My culinary inspiration is also my mentor,Chef John Damico. Growing up in Vermilion, Ohio and working with Chef John at his restaurant, Chez Francois opened many doors throughout my career and gave me the experience I needed to be a strong success in the culinary world. Chef Charlie Trotter and Farmer Lee Jones of The Chefs Garden have also been a huge inspiration throughout my journey. My style of cooking has all of their inspiration of the freshest and finest local, seasonal ingredients.
What would you do with the $25,000?I would put it towards my private chef business, FORK IT LLC.
