Receive Text UpdatesPizza is my favorite thing to cook but if I had a signature dish I would say it’s crispy spinach with a spiced aged vinegar. I am also known for my roasted chicken. Which I cure for 24 hours fire roast and baste in a wasakaka. The chicken sits in tops on aji verde and pickled shallots.
Who is your culinary inspiration?My culinary inspiration starts with my mom and grandmother. Who made the best food everyday while I was growing up. I would also say that my team is a huge inspiration with what they grew up eating and had around them.
What would you do with the $25,000?I have been dreaming of this restaurant idea of a pizzeria meets bistro. Where people come to my space and sit in front of me while I am cooking we are talking and sharing experiences together. All the food would be sourced locally and change as frequently as I can.
