What is your signature dish?

My signature dish is a Roasted Beet salad with a Red Beet sauce, Salt roasted Golden Beet wedges, cheese spread mixed or goat and mascarpone with mint and oregano, a apple/carrot/ Jalapeno slaw and finished with Extra virgin olive oil and Ghost pepper chili salt.

Who is your culinary inspiration?

My culinary inspiration is not a single person, however it is a collective group of chefs i gave worked with in my career. Ranging from various steak houses, departure restaurant in Portland Oregon to ones I have met along the way. I am driven to learn and grow more and more on a daily basis.

What would you do with the $25,000?

I would use that money for my 3 children's education, a much needed vacation with my wife and to set some money aside to obtain a house of my own.
