Who is your culinary inspiration?My culinary inspiration definitely comes from my chef (Michel Gaumond who has taught me from the very beginning, and local farmers. My chef is exclusively farm to table (virtually no waste) and has taught me all about using every part of anything we use (whether it’s skins, bones, etc) and to respect every part of an animal. As for the farmers I have so much respect for what they do that I love to use as much fresh locally sourced/grown produce as possible when I can.
What would you do with the $25,000?I would use the 25,000 dollars for three things. Firstly to travel and explore other cuisines to expand my knowledge. Along with this I would also use the funds to further strengthen my career and work towards opening my very own restaurant in the near future. And thirdly I would make a major donation to my local food bank, as I want to do my part to help in the fight for families who cannot afford to buy their own food.
