My signature dish would be a marinated mesquite grilled bavette with crispy potato tacos, a New Mexico chile colorado sauce, queso fresco, and topped with a cilantro and cabbage slaw. It is a take on some family memories meshed into one dish.
Who is your culinary inspiration?Hard to nail down to a one but some of my inspirations are Francis Mallman, Enrique Olvera, Rick Bayless and Diana Kennedy. Francis for his rustic cuisine and use of every aspect of a fire. From coals to flames. Enrique for the constant innovation of Mexican cuisine and Rick and Diana for bringing awareness of our food and culture to the masses. Also special shoutouts to my mom and grandmother. They showed my that food is love.
What would you do with the $25,000?If I won’t the 25k I would use it to buy some much needed equipment for our family owned Tx Bbq restaurant. We are in need of another smoker and a live fire cooker.
