What is your signature dish?

My signature dish is a Fried Catfish Fillet with Grilled Shrimp and a Crawfish Cream Sauce over Vermicelli Pasta. The proteins in this dish represent all of the regions I’ve been raised;Farm Raised MS Catfish, Shrimp from the Gulf, and LA Crawfish.This dish was featured on the front page of my local Magazine Clarke County “A Little Taste of Our Home” in 2022.

Who is your culinary inspiration?

My culinary inspiration is my late Grandmother Catherine McGee with whom I spent every summer with growing up in the MS Pinebelt. She was very passionate about cooking and she basically spent the entirety of the day preparing 3 home cooked meals for my Granddaddy and cousins/siblings.

What would you do with the $25,000?

If l was to win the $25,000, I would pay for my health inspection for my catering business and purchase a Food Trailer to further my business. This is something my heart has been set on for a long time now.
