What is your signature dish?

Marianas trench pasta. Squid ink infused pasta, fresh butter basted and sautéd scallops, beer boiled muscles and a squid ink infused black Alfredo sauce.

Who is your culinary inspiration?

Everyone! I find passion with all of the great chefs of my generation, however the person who inspires me the most to never give up is my daughter.

What would you do with the $25,000?

Start my food truck or take my catering further then I ever could imagine! It doesn't seem like much, but $25,000 would help me secure a future for my daughter.
