I’d say it’s braised oxtail pappardelle tossed in a rich tomato wine sauce with parmesan, thyme, and a touch of Scotch bonnet heat. It blends refined technique with soulful Caribbean flavour, which is exactly how I approach food.
Who is your culinary inspiration?My culinary inspiration comes from chefs who combine creativity, passion, and personality like Carla Hall for bringing heart and soul into every dish, Massimo Bottura for innovation and storytelling through food, and Marcus Samuelsson for celebrating culture and global flavours through cuisine.
What would you do with the $25,000?I’d invest the $25,000 into growing my culinary brand through equipment, pop-ups, marketing, and expanding my catering and meal prep business. It would help me create more opportunities, reach more people through food, and build a lasting business rooted in culture, creativity, and community.
