What is your signature dish?

How can I put a chicken dish up and feel Proud as a chef? I would say over the years variations would be huge hits when I cook. A Raviolo Manage et Trois - and egg three-way with Egg yolk pasta, egg and creme fraiche sabayon and caviar is a fund one. Anything on a live-fired grill

Who is your culinary inspiration?

Grandmothers around the world to me drive food in its best and more sincere versions - Chefs should be inspired by them, traditions and humbleness, it would do our industry right in ways it is desperate for lately

What would you do with the $25,000?

I am working on finally opening a restaurant of my own after a ling career working for some amazing people and chefs. I have been terrified thinking of doing it over the years, but feel like it is now or never - I have an amazing partner in life and two kids who deserve for me to look them in they eye and believe we can all do amazing things together and when we believe in ourselves
