What is your signature dish?

Hands down, my bacon wrapped meatloaf. Ground beef, pork, and turkey. A couple of eggs, a bunch of spices, some Greek yogurt, freeform it, top it with my homemade BBQ sauce (SauceTradamus), then bacon. Cook, cool, cut, and eat. Serve it with spicy creamed kale. Great the next day with breakfast or as a sandwich too.

Who is your culinary inspiration?

My dad. While mom was the cook growing up, my dad found the kitchen when I was a teenager. The day his spaghetti was better than hers, she retired. And he never looked back, he was fantastic. If he wrote a cookbook it’d be called “About Cooking”. Because you “put in about this much of this, about this much of that”! He taught me that cooking is about feel. He’s a great baker too.

What would you do with the $25,000?

Take my beautiful wife to France or Italy for a special food and wine vacation.
