Fried chicken is my passion project. As good as people say it is, I am always trying to improve on it, which has resulted in several iterations. Each one unique. I don't know if I will ever be completely satisfied, but I enjoy the journey.
Who is your culinary inspiration?Alton Brown and Anthony Bourdain. Good Eats and Kitchen Confidential were must watch viewing for me in culinary school. Alton is all about the science. The how and the why in order to achieve the best results. Anthony inspired me to just love the food and the cultures surrounding it. He made it ok to want to do this. I always appreciated how verbose they both were, as well. They are quintessential culinary story tellers.
What would you do with the $25,000?I am the Executive Chef for a start up catering company in Cincinnati, OH. Last year, my partners and I attempted to buy the company we were working for so that we could keep our team together and continue our vision of providing personalized dining experiences for our clients. For myriad reasons, that fell through so now we are our own entity with the same team and the same wonderful clients. I would invest the money into our business to help continue to grow and secure a home for our team.
