Tiradito is a Peruvian dish of thinly sliced raw fish, similar to sashimi, served with a spicy, citrus-based sauce, reflecting Japanese influence on Peruvian cuisine. It's like ceviche but the fish isn't marinated for long; instead, a vibrant sauce (often made with aji amarillo chili) is poured over the slices just before serving, creating a delicate, fresh flavor. Who is your culinary inspiration?Marco Pierre White for his intensity and love for the craft. Insisting that cooking needs romance. Geronimo Lopez for teaching me to lead the kitchen with empathy before it was in the news. Chef Lopez has a pallet that is worldly and can create lasting memories through the combinations of ingredients and techniques. My family is what allows me to dream and risk and strive to be my best. I want to succeed in the kitchen and in life for them.
What would you do with the $25,000?I am starting a family style kitchen in my home town of floresville tx. We would love to add the finishing touches to the building and have a community BBQ to celebrate.
