What is your signature dish?

Risotto! I make so many variations from Gorgonzola cashew, to “blt” with bacon, scallions and sautéd cherry tomatoes, to classic mushroom but with a combo of shiitake, oyster and creminis. I have mastered this dish and it is always a crowd favorite. Second to that by a slim margin is my Huli Huli mushroom fried rice. It isn’t the main dish of our annual luau, but it is the most favorite.

Who is your culinary inspiration?

I grew up watching and learning to cook from the legend herself, Julia Child. She taught me technique and the mother sauces, things I use in all my cooking. But I learned my own style when I got older and found the other culinary legend Anthony Bourdain. He taught me how to put me into my cooking, how to take any dish and make it my own.

What would you do with the $25,000?

Take a foodie trip across the Hawaiian islands. My first visit to the big island several years ago flamed my passion for Hawaiian food and culture. Since then I have discovered so many talented Hawaiian chefs from cooking shows on tv that I would love to be able to visit each of their restaurants on their respective islands and get to experience each one’s unique take on Hawaiian food. So many have reinterpreted Hawaiian classics with their own view point and techniques that I am dying to
