Receive Text UpdatesKanpachi Tostada | Caramelo Blue Corn Tostada, Yuzu Avocado, Japanese Kanpachi, Marcona Almond Dukkah, Prik Nam Pla, Hajikami, Orange, Shiso, Cilantro Oil & Smoked Maldon Mexican/Japanese fusion, I have a deep love for Mexican/Latin food. Currently the chef at a hand roll bar, so being able to showcase my own interpretation of fusion has been fun.
Who is your culinary inspiration?My dad. Same culinary class as Emeril at Johnson and Wales. I was lucky enough to work with him for my childhood and the beginning of my culinary journey. He instilled the passion and hard work , along with the knowledge and wisdom. You are always continually learning and he is the first person I always refer back to. I would love to open a restaurant with him as my partner, just to have the opportunity to work with him again and continue to gain knowledge about all the lost culinary foods
What would you do with the $25,000?It would help me pursue my dream of opening my own establishment to show my true potential and my passion for the food world. I want to have a place that showcases a lot of cultures, cooking methods and make it a learning environment as well to continue to pass the knowledge along and learn from others
