What is your signature dish?

I don’t have anyone particular signature Dish i’ve been fortunate to open restaurants in the Middle East, Europe and the United States. I pull many techniques from my travels have a very deep passion for southern low country cuisine and celebrating the true flavors of the south. My passion for this style cuisine began in the mid 90s when I moved to Washington DC to design menus and open various restaurants for Capital Restaurant concepts.

Who is your culinary inspiration?

I pull a lot of my inspiration from my team”In Teaching Others we are also teaching ourselves “ also classic French techniques. I truly like to blend different cultures while staying true to the flavors with that particular country or region. I enjoy revisiting old cook books from James Beard, Paul Bocuse and a variety of regional American cook books. Doug Peckham, thank you for being a pivotal culinary mentor. As for a Chef, that I respect the most that would be Marco Pierre White.

What would you do with the $25,000?

I would like to use a majority of it for further food and beverage education of our staff at the Beach Shop & Grill. It may be short courses at Johnson and Wales, The Culinary Institute of America I would like to take our key members on a guided Food & Wine tour to include interactive workshops. Giving back to the hospitality business and inspiring the future Restauranteurs & Chefs of tomorrow is my way of saying, thank you and paying it forward to a career that’s given so much
