I’m not a fan of being put in a box, but if I have to, I would say my sig dish would be branzino crudo w/ basil oil, cripsy onions, pickled mango, pesto panko and a branzino skin cracker.
Who is your culinary inspiration?I trained under Massino Capra, so I would say him, Julia Child and Anthony Bourdain.
What would you do with the $25,000?When I win the $25,000, I would love to take my family on a vacation. My wife works quite a lot and also holds down our household, so it would be great to surprise her and our 4 kids with that.
