Michael is always to honor the ingredients that are available to me for example, since I moved to the Pacific Northwest, I have started to work with amazing fresh seafood and fish. I have a simple approach to my food. I guess if the question is something that I had on a menu that I couldn’t get rid of it would be Jack cakes…
