Receive Text UpdatesMy most requested dish is my homemade chicken and dumplings. Made from scratch dumplings, I smoke the chicken first, then shred it and add to a special gravy, a few other secret ingredients and spices, and simmer for 6 to 8 hours. You can eat it with a fork. One of my golden rules is using apple juice any time I'm cooking pork. From oven roaster to frying bacon, apple juice is a must.
Who is your culinary inspiration?My late grandmother and late mother started me cooking for farm hands when I was 5 years old. I use some of their favorite recipes when I'm throwing together a meal. I'm happy and completely at ease cooking a meal for 15 to 20 people any given Sunday, just like they did.
What would you do with the $25,000?It has been a dream of mine and my daughters to open up a restaurant in Tampa florida that serves real home cooked meals with a menu filled with good southern food. None of that "good for your health" stuff. I use lard and real butter in my dishes. Heavy on the veggies and large portions of meat.
