Tender pieces of pork are simmered until soft in a rich chile sauce made with dried peppers, garlic, spices, and aromatics. As it cooks, the pork absorbs the deep, earthy flavors of the sauce, creating a dish that is savory, slightly smoky, and full of warmth. It is rustic and comforting, yet carefully prepared to bring balance and depth to every bit.
Who is your culinary inspiration?My culinary inspiration comes from the people I feed. Family, community, and the memories tied to a table drive everything I create. I’m inspired by bold Latin flavors, open fire cooking, and the idea that food should feel both comforting and unforgettable. Every dish is an opportunity to honor tradition while adding my own story and technique to it
What would you do with the $25,000?With $25,000, we would take meaningful steps toward creating a more permanent home for our culinary vision. Right now, we operate from a temporary rental kitchen space, so this opportunity would help us invest in stability, equipment, and infrastructure that allows us to grow with intention. More than anything, it would move us from building something temporary to something lasting.
